Colonel Beach’s Plantation Punch comes from Don the Beachcomber and was served at his “Colonel’s Plantation Beefsteak and Coffee House” in Waikiki in the 1950’s.
Ingredients
- 1 oz. fresh lime juice
- 2 oz. unsweetened pineapple juice
- 1/2 oz. falernum
- 2 oz. ginger beer
- 2 oz. dark jamaican rum
- 1 oz. gold puerto rican rum
- 1/2 oz. barbados rum
- 1 dash Angostura bitters
- 6 drops (1/8 tsp) of absinthe or Pernod
Steps
Shake everything except the ginger beer with crushed ice. Pour ginger beer into mixing tin and stir. Pour unstrained into a glass with 3 or 4 ice cubes. Garnish as you see fit.
Tasting Notes
This is a savory cocktail with rum notes on the end. The bitters and absinthe seem to remove the sweetness from the rum and juice.
after letting the drink sit a bit, I also picked up on the familiar and unique flavor of the falernum.
As the flavors began to meld together, I could also taste a bit of the pineapple juice on my lips.
This is not your typical light and fruity tiki/tropical drink. The Colonel Beach’s Plantation Punch has a bit more body and deeper savory notes. It is very enjoyable and drinkable.
