The Doctor Funk comes from the Palm Springs Don The Beachcomber’s, circa 1953, based on an actual South Pacific drink.
Ingredients
- ¾ oz fresh lime juice
- ½ oz grenadine
- 1 tsp Pernod (or absinthe)
- 1½ oz light rum
- 1 oz club soda
This is another cocktail recipe that absolutely requires to be doubled. A pilsner glass is just too big and the quantities listed look very sad in the glass. Adding ice to compensate, looks bad. I refuse to serve watered down drinks at home!
Steps
Shake everything—except soda—with ice cubes, then add soda to the shaker and stir. Pour unstrained into a pilsner glass. If necessary, add more ice to fill.
I did not add the club soda and stir. I just poured the club soda last into the glass because I likes the way the carbonation looked.
Garnish with maraschino cherries and a lime wheel. (Dehydrated wheel if you’re one of the cool kids).
Tasting notes
The Doctor Funk has a fruity sweetness up front with a mild, black licorice on the finish.
